Out of curiosity I've always wondered why Canonical bundles ZFS in the desktop installer but not the server installer? Afterall ZFS is a file system targeted at servers.

I feel ZFS is targeted for all: Server & Desktop... But that's just me.
I do all mine manually. That way I can setup detached home, and data pools. And do my own tweaks to the zpool options to get around things that have changed recently.
